Creamy Avocado Sauce

I first made this sauce about 3 years ago. My then boyfriend thought it would be a good idea to follow one of these recipes he saw on instagram. Ok Cool. Looked good. He told me avocado, garlic cloves, basil, cilantro and something else. It wasn't good at all. All I could remember about it was how garlicky it was. I couldn't eat it. After searching through countless recipes on the net and trying a few things that I like, I came up with this recipe. It's creamy, nutty and not overpowering.

Ingredients

  1. 1/2 soft Avocado
  2. 1/4 tsp Garlic Powder
  3. 1 tbsp lemon juice
  4. 1/2 tsp White Wine Vinegar
  5. Olive Oil drizzle
  6. 1-2 tbsp Walnuts
  7. 1/4 cup Water
  8. Salt to taste
  9. Cherry Tomatoes cut in half
  10. Pasta

Directions

  1. Cook pasta as per directions on the package. Run under cold water to cool off pasta.
  2. In a food processor, combine the first 8 ingredients on low for a few seconds. Stop to stir mixture with your spatula, scraping sides. Mixture should be creamy and a bit chunky from the nuts.
  3. Adjust flavors per your liking 
  4. Put pasta in a large bowl and toss it with the avocado sauce. Add sliced tomatoes. Serve with grated cheese.
