Chicken Cordon Bleu
Another one for the blog. I've been thinking of my aunts chicken cordon bleu for a few days now. It was only about time that I made it. This is such a simple 45min recipe that the whole family will enjoy. Trust the Mexican :)

Ingredients
4 whole skinless Chicken Breasts
Sliced Swiss Cheese
Sliced Ham, for this recipe I used Mortadella
1 cup Flour
1tsp Paprika
1/2tsp Salt
1/2 tsp Pepper
1 Chicken Boullion Cube
1/4cup Butter
1cup White Wine
1 Bunch of Lemon Thyme
12oz Baby Red Potatoes
Lemon squeeze (Optional)
Directions
Mix together Flour, Smoked Paprika, Salt and Pepper in a bowl
Halve mini potatoes, (don't season)
Pound Chicken breast to a thin cutlet
Place as much Cheese and Ham slices as you want on each breast. Roll up and secure with tooth picks
Take out a medium/large stainless steel saute pan and melt butte. Once butter starts to brown, add chicken roll ups, saute for 2min spooning butter over chicken. Add wine and boullion cube. Mix
Add potatoes to the center of the pan and the bunch of Lemon Thyme on top. Cover and simmer for 30min. Sauce will start to thicken. After 20min, spoon gravy over chicken and let finish cooking.
Using a spatula, serve chicken and potatoes. Top with gravy.
