Sausage & Peppers

Ingredients
1/4 cup Extra Virgin Olive Oil
1lb Italian Sausage, sweet or hot
1 Red Bell Pepper, sliced
3 Poblano Pepper, sliced
1 large Yellow Onion, sliced
1/2 tsp Oregano
1/2 cup Chopped Basil Leaves
4 Garlic Cloves, chopped
2 tbsp Tomato Paste
1/2 cup Marsala Wine
1/2 cup Sherry Wine
15oz can Diced Tomatoes
Pepper Flakes (optional)
4 Hoagies
Directions
Heat oil in large stainless steel skillet over medium heat. Add the sausages and cook until brown on all sides, about 7-10min. Remove sausage to a plate.
Keeping the pan droppings, add peppers, and onion. Season with salt and cook until brown, about 5min. Add the herbs and cook 2 more minutes.
add the tomato paste and stir. Add marsala wine and sherry wine, diced tomatoes, chili flakes (if using). Stir to combine, scraping the bottom. Bring to a simmer.
Cut the sausages into bite size pieces. Add sausage to pan and combine. Cook until the sauce has thickened, about 15min.
Hallow out one side of the hoagie and fill it with sausage and peppers. Enjoy!
