Cashew Beef

Cashew Beef

So easy your husband can do it :)

….Serves 2


Ingredients

  • 2 tbsp cooking oil

  • 8 ounces beef (flank, skirt, sirloin) cut into bite sized strips

  • 3 tbsp Oyster Sauce

  • Mini red and green peppers (as much as you want) cut into thin strips

  • 1/2 cup celery stalk, sliced into thin half moons

  • 1/2 cup carrot, sliced into thin slices

  • 1 handful Enoki Mushrooms (can be found at your oriental grocer)

  • 2 tbsp soy sauce

  • 1 chives, sliced

  • 2 tbsp cashews toasted

  • 1 tbsp chili garlic sauce or sriracha

  • Cornstarch (optional to thicken sauce)


Directions

  1. Heat wok or skillet over high heat. Add oil, beef and Oyster Sauce; cook until beef is half done.

  2. Add peppers, celery, carrots and soy sauce; stir-fry until vegetables are tender. 2min or so. Stir in chives, enoki and cashews. Cook for another minute. If you want a thicker sauce, add cornstarch 1 tsp at a time.

  3. Add Chili sauce on top and serve with noodles or rice.
