Cold Soba Noodle Salad w/mango dressing

The Mr. has been hassling me about how much pasta we have in our pantry. I guess he wanted me to cook some. Ever try Soba Noodles? You won't be disappointed. They are lighter, healthier and the same price as a box of pasta. So why not substitute a heavy loaded noodle with something you wont regret.

Ingredients

  • 1 mango, pitted                                                                                
  • 1/4 cup rice vinegar
  • 1/4 cup sesame oil
  • 3 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp grapeseed or a flavorless oil
  • 1 tbsp chili garlic paste or red curry paste
  • 1 tbsp minced ginger
  • 1 package of soba noodle or other thin long noodle

Topping -optional

  • 1 mango cut into match sticks
  • watermelon radish sliced thinly into matchsticks
  • 1/4 cut mint leaves, basil and cilantro
  • crushed peanuts

Directions

  1. Peel and devein shrimp. Season with S&P and a drizzle of oil. Cook 3 min per side until done. Set aside.
  2. Make the dressing: Put the 8 ingredients in a food processor and blend until it looks like dressing. Blend. 
  3. Cook the noodles as per directions on the package. Run them under cold water to stop the cooking process. Put noodles in a bowl and toss in the mango dressing until lightly coated. Fold in herbs.

  4. S&P to taste

  5. Divide between plates and top with the matchsticks. Top with peanuts

You can save the left over dressing for another salad
