Breakfast Pizza

Breakfast Pizza

Eggs, beans, spinach, cheese more cheese and something sweet. Add all that on some bread and bake! This is perfect for when you have brunch at your house or if you want to have breakfast for dinner. You can honestly add whatever you want on top. Quick and easy to make it sure won't disappoint!

Ingredients

Pizza Dough, Pastry Puff or Flatbread

2-4 Eggs

1/2 - or 1 can of black beans, rinsed and drained

Mozzarella Cheese (or any cheese you have)

Parmesan Cheese

2 Dates

EVOO for greasing

1tbs butter

1tbs flour

1tbs Dijon Mustard

1 handful of spinach

Sea Salt, Pepper, Red Pepper Flakes

Chopped Chives

Optional: Tomatoes

Directions

  1. Preheat oven to 450*F
  2. Lay some flour on the table and spread out the dough using a rolling pin to your desired size.
  3. Melt butter in a saucepan oven med-low heat. Add flour and whisk until combined. Add milk and mustard and stir until thoroughly combined. Simmer on stove for 1 minute. Mixture should turn into a sauce. Turn off heat and set aside.
  4. Lightly grease a baking sheet and place the dough on top. Spread the sauce all over the dough evenly. Sprinkle the cheese over and layer with the black beans. You can use as little or as much as you want. If you want to add tomatoes here you can. Grate parmesan cheese. Sprinkle sea salt and pepper over. Bake for 5min.
  5. Take pizza out and add chopped dates and eggs. Bake for another 10-15min until crust is lightly browned leaving eggs runny.
  6. Still warm, spread a handful of spinach and a pinch of salt and garnish with chives. Slice with pizza cutter and serve warm.
  7. Saving for later? wrap, refrigerate and heat up in toaster oven for 3min.

****Want to add meat? swap out the beans for bacon bits or prosciutto
