Ingredients
2 cup Quinoa
1 Red Onion, finely diced
1 Cucumber, diced
1 12oz package of Grape Tomatoes, quartered
4oz Feta (optional)
Juice of 1-2 Lemon
Olive Oil
Salt and Pepper
Oregano (optional)
Directions
Finely dice red onion and put in a small bowl. Drizzle olive oil and squeeze the juice of 1 or 2 lemons, season with salt, pepper and oregano and give it a toss. Let marinate while you prepare everything else. Toss frequently.
Cook Quinoa per directions on the package then let cool in a medium-large bowl.
Dice the cucumber and quarter the grape tomatoes. Once the red onion begins to turn translucent you can add the cucumber and tomato. Add the quinoa once it has cooled slightly and toss. Add feta. Drizzle a bit more olive oil and lemon juice if needed. Salt and pepper to taste.
