Tacos Gobernador (Governor's Shrimp Tacos)
I got the initial recipe from Mexican Chef Pati Jinich but adjusted it to my taste
Ingredients
1lb Shrimp
Salt, pepper, garlic powder and onion powder - to taste
1 1/2 White Onion, sliced
2 Pablano Peppers, sliced
5 Cloves, minced
2 tbsp Worcestershire Sauce
2 tbsp tomato paste
2-3 tbsp Chili paste
Flour/Corn Tortilla
Cotija Cheese or Oaxaca Cheese
2 Roma Tomatoes, cored and seeded
Cilantro - to taste
1 Lemon
1 Avocado
4 tbsp Butter
Instructions
Wash and clean shrimp. Season shrimp in a bowl with salt, pepper, garlic powder and onion powder. Grill shrimp 2 min per side until cooked and slightly browned.
Slice up the peppers and onions, mince the garlic, chop the cilantro, core, deseed and chop tomatoes.
Make the salsa: add chopped tomatoes and avocado to a small bowl with the cilantro and half of a lemon juiced. Sprinkle a little salt and mix. Set aside.
In medium nonstick pan over medium heat, melt butter. Saute peppers and onion until translucent and a little brown. Add garlic and saute until fragrant. Add tomato paste, Worcestershire, chili paste for 1-2min until well combined. Season salt and pepper. Put in a bowl.
Clean out the pan with a paper towel. Lay 2 tortillas on the pan (or however many you can fit) and load it with cheese. Over medium heat, fold the tortillas in half and press down making sure to ooze out some of the cheese. I like the taste of burnt cheese so thatβs what youβre going for here but cook to your liking. Cook until cheese is melted and tortillas are nicely toasted.
Take tortillas and spread open, layer peppers and onions, then shrimp, then top with the salsa. Enjoy!
