Lemony Ricotta Pancakes
Lemony, moist, fluffy pancakes for breakfast or dessert :)
Ingredients
1 1/2 Cups All-Purpose Flour
3 1/2 tbsp Granulated Sugar
2 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Salt
1 cup Buttermilk
3/4 cup Ricotta
3 Large Eggs
1 tsp Lemon Extract
Zest of 2 lemons
1/2 fresh Lemon Juice
1 tbsp Butter, melted
Directions
Mix dry ingredients together in a mixing bowl. Whisk eggs in a medium bowl until foamy. Add buttermilk, and ricotta and whisk until well combined. Add the rest of the ingredients. Whisk until semi smooth. It should be a little lumpy. Combine wet mixture to dry mixture and stir.
Heat a medium nonstick saute pan or griddle. Using, PAM, butter or Oil to coat surface. Ladle mixture until you see lots of bubbles. Flip for another minute or so.
Serve with berries, warm syrup and/or powdered sugar
