Bison Chili
Ingredients
1 Tbsp Vegetable Oil
2 lbs Ground Bison
3 Poblano Peppers, seeded and diced
1 Yellow Onion, diced
1 Shallot, diced
3 cloves garlic. chopped
28oz canned Diced Tomatoes
15oz canned Black Beans
15oz canned White Beans (optional)
15oz canned Red Beans (optional)
1/4 tsp Cayenne Pepper
1 tsp Cumin
1 tsp Paprika
1 tsp Coriander
1-6 tbsp of Chili Powder
Salt and Pepper to taste
Directions
1. Heat oil in a large Dutch Oven over medium heat. Once oil is very hot, add Bison to brown and breaking it up into chunks avoiding little pieces about 10min. Using a slotted spoon, transfer to a plate. Add poblano pepper, yellow onion and shallot. Cook until softened, about 5min. Add spices, garlic and cook until fragrant and slightly toasted. Add the tomatoes with juices and bring to a simmer while scraping any browned bits off the bottom. Return the Bison to the pot along with the beans including juices, and 4 cups of water. Bring to a boil , and then reduced the heat, cover and simmer until thickened, about 45min. Season with salt and pepper.
