Tilapia Milanese

Ingredients
1 1/2 cup Panko Crumbs seasoned
1 packet of Goya Sazon
2 large Eggs
1 lbs Tilapia Fillets
3tbsp Canola Oil
2 plum Tomatoes, basil
1/2 small red onion, basil
a few leaves of Basil, chopped
1 tbsp Balsamic Vinegar
Directions
Add the panko and sazon to a shallow dish stir to combine, in a medium bowl, beat the eggs. Season tilapia with salt and pepper. Dip each filet in the egg, dripping off excess, the panko and place on a plate. Follow with remaining filets.
in a 12in stainless steel skillet, heat oil over medium. Working in batches, cook fish until golden brown, flipping once. Transfer to a paper lined plate. While fish cooks, chop tomatoes into a small bowl, add chopped red onion, chopped basil and balsamic. Season with salt and pepper, stir to combine.
Add tomato mixture over tilapia and serve with a quinoa salad or rice.
