Sausage & Potato Soup
Ingredients
1 small Onion
4 small Carrots
3 links Sweet Sausage
1 tbsp Olive Oil
1 tbsp Garlic, minced
2 tbsp Lemon Thyme, chopped
3 small Gold Potatoes
4 cups Chicken Broth (I use Knorrs) + 2 cups Water
Handful of Baby Spinach
Handful of Kale, hand torn
Directions
Slice the onion. Slice carrots. Remove sausage from casings and slice. Dice potatoes.
In a dutch oven, heat olive oil and add sausage, season with salt and brown lightly, about 3min. Break it up sausage with a wooden spatula. Add onions, carrots, garlic and thyme. Season with salt and pepper. Cook 3min, until onion softens.
Add broth to the pot, potatoes, and 2 cups of water. Bring to a boil then simmer for 15min until potatoes tender.
Stir in Kale and/or Spinach until wilted. Season with salt and pepper to taste.
