Turkey Pot Pie
Ingredients
1/2 Onion, finely diced (I used 1/4 red and 1/4 yellow)
2 Garlic Cloves
Ground Turkey 85%/15%
1/4 tsp Lemon Thyme
1-2 tsp Oregano
15oz can Del Monte Mixed Vegetables
8oz can Cream of Chicken
2 Pie Crusts
Pyrex Pie Dish
Kosher Salt and Ground Pepper to taste
Directions
Finely diced onion and minced garlic.
In a stainless steel 12” saute pan, drizzle olive oil over medium heat and saute onion until glossy, about 3min. Add Garlic and stir. Add ground turkey and season with kosher salt and pepper. Stir meat until juices start to come out. Add more kosher salt, lemon thyme and oregano. Cook until turkey is no longer pink.
Add vegetables, cream of chicken and 1 can of water. Stir to combine well and bring to a boil. Meanwhile, preheat oven to 425 and prepare pie dish with crusts according to the package. Bake uncovered for 20min, cover with tin foil for another 20min. For a more brown crust, bake for an additional 5min or so.
Let rest for 10min before serving
