Berry Lemon Scones
I have a newborn who constantly needs my attention, so I made these in a muffin pan so I wouldn’t get my hand dirty shaping the dough
Ingredients
2 cups flour
1/3 cup sugar
1 tsp Baking Powder
1/4 tsp Baking Soda
1.2 tsp salt
1/2 cup Butter, SOFTENED
3/4 cup Milk
1 Egg
Zest of 1 Lemon (optional. I used several drops of lemon essential oil instead)
1 cup Berries (I used frozen)
Directions
Preheat oven to 400F
In a medium bowl, whisk to combine dry ingredients. Cut in butter until mixture is crumbly (wear gloves). In a small bowl, whisk milk, egg, lemon zest (or drops) together. Add to dry ingredients. Gently fold in berries.
lightly oil then add dough into a muffin pan. Sprinkle tops with sugar.
Bake for 22min or until golden brown. Start checking at 18min.
